Triple Berry Coffee Cake

20140522-214617.jpgI have a breakfast problem. I seriously crave sweets in the morning. Well lets be honest, my perfect breakfast involves a savory breakfast followed by a sweet breakfast dessert. So I decided it was time I introduced my daughter to the two course breakfast. Breakfast sausage first, and then coffee cake.20140522-214630.jpgPeople this was the best coffee cake I’ve ever had. The crumb topping is epic. It’s soooo good. Seriously you need to make this. And it’s super easy. Mix, pour and bake. Do it this weekend, you will not be sorry.20140522-214640.jpg
Triple Berry Coffee Cake

Ingredients

For the cake:

1 1/2 sticks of butter, softened
1 3/4 cups sugar
1 teaspoon molasses
2 teaspoons vanilla
3 large eggs
1 1/4 cup wheat flour
2 cups all purpose flour
2 1/2 teaspoons baking powder
1 1/4 teaspoons salt
3/4 cup sour cream
1 1/4 cup milk
10 ounce bag of frozen mixed berries

For the topping:

1 3/4 cups sugar
1/2 teaspoon salt
2 cups all purpose flour
1/2 tablespoon cinnamon
1 1/2 stick butter, softened

Directions

1. Preheat oven to 350 degrees. Grease a 9×13 pan.

2. Make the topping. Mix sugar, salt, flour and cinnamon. Mix in butter until crumbly. Set aside.

3. Make the cake. In the bowl of an electric mixer cream together butter, sugar and molasses. Add vanilla and eggs, beating after each addition. In another bowl mix flours, baking powder and salt. Add flour and sour cream. Slowly add milk. Add berries and mix until well incorporated. Pour into greased pan and spread evenly. Sprinkle crumb topping over batter. Bake for 60-90 minutes depending on your oven, cake is done when a toothpick inserted comes out clean.

She’s 20 months old today. 20 months. How the heck did that happen? And yes people, its 20 MONTHS. She’s not 1, and she’s not 2. So stop all of your stupid facebook posts about it. If you had kids you would get the huge difference between a 12 month old and a 24 month old. It’s like a completely different child.

She started gymnastics classes last weekend. She’s like the little wild child off doing her own thing. All of the other kids have been doing it for a long time, and most of them are quite a bit older. They all run around and do the activities they are supposed to, while she’s off in the corner running back and forth on the rainbow colored mats. She’ll get it, she’s just catching up. And when she does it’s adorable. Like when she takes off in her version of a run around the mats with the other kids. Or accepting hugs(albeit grudgingly) from the 2 older girls who are seemingly smitten with her. Oh it makes my heart swell.

I read an article online recently about Zofran and its possible link to heart defects. I was not on Zofran, but probably would have been had I received my prenatal care in a doctors office rather then a birth center. In the comments someone said it was worth the risk for them as heart defects are correctable. I wanted to punch that person in the face. Subsequently I realized I spend too much time online.
